NSFW Artisanal Beef Burger

Recipe below!


Ingredients for the fluffiest homemade buns

Prepare the Tangzhong:

40gr flour (1/3cup)

120ml water (1/2cup)

Heat in a pan while whisking until it is gelatinized (it needs to get to 65C)

Bring to room temperature before use


For the Dough

Dry ingredients:

360gr flour (3cups)

30gr sugar (2TBS)

6 gr yeast (2tsp)

6gr salt(2tsp)


Wet ingredients:

140ml water (1cup+1TBS)

1 egg

All of the Tangzhong at room temp

Extra:

25gr Softened butter (2 TBS)

Method:

In a stand mixer mix the dry ingredients

Add in the wet ingredients and knead for 2 mins

Add the butter and knead for 8 more mins.

Proof in a covered bowl until double (1-2h)


When the dough has doubled:

Cut the dough in 120gr pieces and shape them into balls.

Transfer them to a parchment lined baking sheet and let proof for 45mins


Preheat the oven at 190C

Bake for 30-40mins or until golden

Let cool and prepare the burger filling


For the yoghurt sauce:

Mix 100gr yoghurt with 100gr softened cream cheese and salt


For the jam:

If your berry jam is not spreadable; cook 100gr of it on the stove for some minutes to soften


For the caramelized onion and patties:

Preheat your pan on the stove with some butter

Cut 2 onions into rings and add them to the hot pan

Cook the onions for 10 minutes stirring every 1-2 minutes

Add salt and 1.5 tablespoon honey (or sugar) for faster caramelization and cook 2 more minutes stirring 1-2 times

Set aside and in the same pan add some more butter and cook ground beef (roughly shaped into 130-180gr balls)

Press the ground beef while inside the pan to form them like patties

Sprinkle salt and pepper.

For medium rare cook beef for 3-4 minutes on high heat. Then turn on the other side, salt and pepper again and cook for another 3-4 minutes

Set the patties aside.


Butter your buns and lightly toast their crumb side too

Assembly

Cut buns in half and spread mayo (or honey mustard sauce) on the bottom bun

Add the patty and then the caramelized onions

Spread 1-2 teaspoons f yoghurt sauce

Spread 1 teaspoon berry jam

(Optionally add one fried egg)

Cover with the second bun

And enjoooy!
