24. Halloween Burger
The filling consists of:-Pumpkin Mayonnaise-180gr Beef Patty-Lettuce-Red Sauerkraut-Mozzarella Cheese-Pumpkin Sauce-Sweet Chili Sauce
For the Black Burger Buns:
Ingredients:-480gr Bread Flour-30gr Sugar -8 gr Salt -8gr Yeast -200ml Water-180ml Milk-20gr Activated Charcoal
Method:
1.Mix the bread flour, sugar, salt, yeast and charcoal in the bowl of your stand-mixer. Make sure that the yeast does not come in contact with the salt.2.Add in the water and milk.3.Knead for 10 minutes.5.If the dough still sticks to the sides of the bowl and not only the bottom, add 1 TBS of flour and knead until it is incorporated. Knead until the dough only sticks to the bottom of the bowl.6.Shape the dough into a ball7.Transfer in an oiled bowl and let proof for 1-2 hours until double.
8.When the dough has proofed, punch it down to degas it.9. Divide to 140gr pieces and shape into balls.10. Transfer to a baking sheet lined with parchment paper.11. Press them with your palm a little, to make a little bit like discs.12. Let proof for 30-40 minutes.13. Meanwhile preheat your oven to 190C-200C (depending on your oven's power).14. Before baking apply egg wash (1 egg yolk + 15ml milk) on the tops of the buns.15. Then sprinkle with sesame seeds (optional)16. Bake until golden approximately 25 minutes.17. Let cool and prepare the burger.
For the pumpkin mayonnaise:In a small bowl mix 30gr mayonnaise with 60gr pumpkin puree
For the pumpkin sauce:In another bowl mix 40gr pumpkin puree, 40gr mayonnaise and 10gr strawberry jam
For the burger patty:
-Fry the beef patty on the first side for approximately 4 minutes for medium rare. Sprinkle salt and pepper on its top while it cooks.-Flip the patty and fry for another 4 minutes (until internal temperature is 60C. Note that the cooking time will vary depending on the patty’s thickness). While it cooks, sprinkle salt and pepper on that side too and add 2 mozzarella slices so that they melt on top of it.-Remove from the pan and set aside to rest.
Slice a bun and spread pumpkin-mayonnaise on the inside of the buns (optionally you can grill them beforehand).
For the assembly of 1 burger:
Add the ingredients in that order on the bottom bun:-Lettuce-Red Sauerkraut-180gr Beef Patty with mozzarella cheese-Pumpkin Sauce-Sweet Chili Sauce
