Egg Nog

The best christmas beverage! Have you enjoyed it yet?



Ingredients:

Egg mixture:

6 egg yolks

100gr sugar


Milk mixture:

250ml heavy cream

500ml milk

Vanilla extract

Pinch of salt

️Pinch of nutmeg

️Pinch of cinnamon



Method:

•In a pot combine all of the milk mixture ingredients and cook on medium heat until the mixture is really hot. (Stir occasionally to keep dairy from sticking to the bottom.)

•In a bowl, combine the sugar and egg yolks and whisk until fluffy

•Add a little bit of the hot milk mixture in the bowl with the egg yolks-sugar, whisking vigorously.

•Slowly add in more of the hot milk in small batches whisking continuously until almost all of the milk is added to the bowl.

•Transfer back to the pot while whisking and heat on medium

•Cook whisking constantly until the mixture reaches 72C, at which point the egg yolks will be pasteurized.

•Remove from heat and transfer in big jar.

•Close the jar with its lid and refrigerate.

•Once it cools down serve with some whipped egg white and a cinnamon stick!

(You can also enjoy it hot)
