Chèvre aux Châtaignes Burger

This burger consists of:

-Mayonnaise

-Chevre Cheese l

-Pork Neck

-Bacon

-Tomato

-Apple-Chestnut Sauce


For the Apple & Chestnut Sauce:

120gr chestnut

1 apple peeled and diced (optimally granny smith or honey crisp)

120ml apple juice

1 TBS honey

1TBS apple cider vinegar

1/2 tsp thyme

Salt

Some butter on a pan

Cook apples fir 5 minutes until soft

Add the rest of the ingredients ans cook for 5 more minutes.

Blend / emulsify.

Adjust sweetness (with honey) or saltiness to taste



For the Burger Buns:

Ingredients:

-480gr Bread Flour

-30gr Sugar

-8 gr Salt

-8gr Yeast

-200ml Water

-180ml Milk


Method:

1.Mix the bread flour, sugar, salt and yeast in the bowl of your stand-mixer. Make sure that the yeast does not come in contact with the salt.

2.Add in the water and milk.

3.Knead for 10 minutes.

5.If the dough still sticks to the sides of the bowl and not only the bottom, add 1 TBS of flour and knead until it is incorporated. Knead until the dough only sticks to the bottom of the bowl.

6.Shape the dough into a ball

7.Transfer in an oiled bowl and let proof for 1-2 hours until double.

8.When the dough has proofed, punch it down to degas it.

9. Divide to 140gr pieces and shape into balls.

10. Transfer to a baking sheet lined with parchment paper.

11. Press them with your palm a little, to make a little bit like discs.

12. Let proof for 30-40 minutes.

13. Meanwhile preheat your oven to 190C-200C (depending on your oven's power).

14. Before baking apply egg wash (1 egg yolk + 15ml milk) on the tops of the buns.

15. Then sprinkle with sesame seeds (optional)

16. Bake until golden approximately 25 minutes.

Let cool and prepare the burger.


For the pork neck:

-Cut the pork neck into really thin slices.

-Preheat a skillet with some olive oil.

-Fry the pork neck on the first side for approximately 6 minutes.

-Flip and fry for another 6 minutes (until internal temperature is 64C. Note that the cooking time will vary depending on the thickness). While it cooks, sprinkle salt and pepper on that side. While cooking this side add 2 cheddar slices on top so that they melt.

-Remove from the pan and set aside to rest.


-On the same pan add the bacon and cook for 2 minutes each side.


For the assembly:


Slice a bun and butter the inside of buns. Grill them.


Spread mayonnaise on the inside of the bun.



Assemble in that order:

-Mayonnaise

-Apple&Chestnut Sauce

-Chevre Cheese (blowtorch it)

-Pork Neck

-Bacon

-Tomato

-Top Bun
