Brownie Tangzhong Rolls

Who said you can't fuse Bread and Brownies together??

It's a combo so unique and unexpected; the perfect treat to surprise your friends and make them crave your goodies everytime <3


For the Dough:

Ingredients:

600gr Bread Flour

8gr yeast

120gr sugar

7gr salt

6gr milk powder (optional)


60gr honey

1 egg

250ml milk

3gr vanilla powder


After some kneading:

60gr butter


Method:

Combine the dry ingredients, the bread flour, sugar, salt and instant yeast. Add the wet ingredients to the dry ingredients (warm milk, egg and tangzhong).

Using the dough hook on your mixer, on low-medium speed, knead for 2 minutes until the ingredients are incorporated.

Add the butter and continue mixing on medium-high speed for 8 minutes for the gluten to develop.

Transfer the dough to an oiled surface, shape it like a ball and transfer to an oiled bowl to proof until double (1-2hours)

Now it's time to prepare the Brownie Batter:

Ingredients:

85gr butter

45gr chocolate

130gr sugar

2gr salt

1egg

1 egg yolk

35 gr flour

10gr hazelnut flour

40gr cocoa powder

3gr espresso powder

3 gr vanilla extract


Method:

In the bowl of your stand mixer fitted with a whisk attachment, beat your eggs, sugars and vanilla together until very light and fluffy – about 6 minutes.

Melt the butter and and let it get really hot. Then add the chocolate and stir until it melts


Whisk together the cocoa, salt, and flour in a separate bowl.


Add the chocolate mixture to the eggs and stir to combine. Add the flour and turn the mixer on with the whisk attachment until the dry ingredients are just combined. Use a spatula to scrape bottom and sides of bowl to incorporate.

After the dough has proofed:

Transfer the proofed dough to an oiled surface, divide into 2 pieces and roll each piece into a rectangle. Spread the brownie filling on each rectangle and then fold it like a log lengthwise.

Cut the dough crosswise and transfer to a parchment lined pan to proof for another 45 minutes.

Preheat oven to 375 F/ 180C

Egg wash but avoid the brownie layer.


Bake for 20 minutes or until golden.
