Beef Burger From Scratch

Ingredients

For the Tangzhong:

60gr flour

180gr water

Add the water and flour in a pan and heat while whisking constantly on medium heat.

Keep stirring until the mixture thickens into a pudding-like consistency. 

Remove from heat, transfer in a bowl and cover with a plastic wrap touching the surface of the tangzhong.

Let come to room temperature before use.


For the Dough:

Dry Ingredients

520gr flour 

20gr sugar 

8gr instant yeast 

10gr salt


Wet Ingredients:

210ml water

1 egg

All of the Tangzhong at room temperature


Extra:

60gr butter




Method

For the dough:

In the bowl of your Stand Mixer, whisk together the dry ingredients.

Add in the wet ingredients and knead with the dough hook for 2 minutes. 

Add in the softened butter and knead for 10 more minutes.

Transfer the dough into an oiled bowl and let proof covered with plastic wrap until double (1-2h)

Once proofed, punch it down and divide the dough to 140gr pieces.

Shape each piece into a ball

Transfer them to a parchment lined baking pan to proof for 40mins

Preheat your oven to 200C

Apply egg wash on top of the buns and bake until golden


Let cool and prepare the burger-filling


You will need: 

Mayonaise

180gr beef patty for each burger

Cheese slices

3 Honey-Caramelized onions cut in rings

Bacon

Strawberry sauce

Slice the Buns and butter their inside



Cook the beef patties for 3-4mins on medium-high heat on each side for medium rare

When cooking the second side, top each patty with a cheese slice and cover with a lid so that it melts

Remove the patties from heat and add in the bacon slices

Cook each side until the bacon is crispy (~2-3mins each side)

Remove from heat and add in onions cut in rings

After cooking for 5-10mins, add in 1 TBS honey and cook until the honey is reduced and the onions caramelized

Remove the onion rings and add in the buttered buns. Cook until they brown


For the sauce:

Mix equal amounts of mayonaise and strawberry jam


Assemble the burger:

Apply mayonaise sauce on the bottom bun

Place in a beef patty

Then bacon and onions

Then sauce 

Cover with the top bun

Enjoy!
