Quick Sourdough Foccacia with Candied Bacon&Apple

Ingredients
For the Dough:
150gr (½ cup + 1 tbsp) sourdough starter (doesn't have to be fully active)
300gr (1 ¼ cups) water
500-520gr (4 + 1/3 cups) white bread flour
2tsp instant yeast
12gr salt
12gr sugar
For the toppings:
4 thick bacon thinly sliced (I used the handmade @GreekButcher bacon )
1 apple
15ml honey (1 TBS)
Pinch of Salt
Method:
For the Dough:
In the bowl of your stand mixer mix the sourdough starter and water
Add in the rest of the dough ingredients ans knead for 10mins
Transfer to an oiled bowl, cover and let proof for 1-2h (until double in size)
Prepare a 30cm cast-iron pan with an oiled parchment paper
When the dough has proofed, punch it down and shape into a ball
Press the ball to flatten as much as possible and start stretching it by pressing your fingers in the dough and pulling it outwards to create a circle, until it is almost the size of your cast-iron pan
Transfer to your pan and stretch with your fingers to cover the pan
Cover and let proof for 1-2h
Preheat your oven at 200C
When the dough is proofed, prepare the toppings
Add butter to a skillet and heat
Add the bacon and apple and cook for a minute in the hot pan
Add the honey and cook for 1-2 more minutes
Remove the toppings from heat and spread on top of the focaccia
Sprinkle EVOO on your focaccia
Dip your fingers in the focaccia, pushing the toppings inside too
Bake at 200C for 30-40mins
Remove from the oven and let cool
If you eat the focaccia the same day, you can brush its top with water-diluted honey
(The top might become soggy if you brush and don't eat the same day)
